Ingredients
12 small strawberries
1 rice cake
1 tablespoon lemon juice
1 Vanilla LA Drink Mix®
Instructions
Place rice cake in a small bowl.Prepare LA Drink Mix® with
4 ounces water. Add lemon juice.Place strawberries on top of rice
cake. Pour drink mix over strawberries. Garnish with strawberry
on top.

PASTA AND VEGGIES WITH VINAIGRETTE
Nutritional Value
1 Starch (Limited), 3 Vegetables, 1 Fat
Ingredients
1 cup zucchini or yellow summer squash, sliced
1/2 medium green pepper, chopped
1 clove garlic, minced
1 teaspoon canola oil
1/2 cup cooked (1 oz. raw) rigatoni pasta
2 tablespoons white wine vinegar
1/4 teaspoon dried dill
1/8 teaspoon Morton Lite Salt
Dash of pepper
1 small tomato, chopped
1/2 tsp. parmesan cheese
Instructions
Cook pasta according to package directions. Drain well.In a large
skillet, cook the squash, pepper, and garlic in oil, until crisp.Add
pasta, vinegar, dill, salt, and pepper; to vegetable mixture and
mix well.Add the tomato; cook and stil until fully heated. Sprinkle
parmesan cheese over top for taste.

BROILED GINGER SCALLOPS

Ingredients
6 or 8 ounces scallops (according to plan)
1/8 cup low sodium soy sauce
1 tablespoon gingerroot finely chopped
1/8 cup lemon juice
1 tablespoon Sugar Twin® brown sugar
Instructions
Arrange scallops in a single layer in a baking dish.Marinade: Heat
soy sauce. Add gingerroot, lemon juice, and brown sugar; simmer
2 - 3 minutes. Pour over scallops. Cover and refrigerate at least
2 hours.Remove scallops from marinade and place in a single layer
on a broiler pan. Broil 4 inches from heat until scallops are opaque.

ORANGE MANGO SMOOTHIE

Ingredients
1 cup of crushed ice
1 cup of fresh mango, cubed
1/2 cup skim milk
1/2 cup fresh squeezed orange juice
1 tsp. honey
Servings : 2
Instructions
In a blender, combine ice, mango, milk, orange juice, and honey.Blend
until smooth. Pour into chilled glasses and garnish with an orange
slice.

APPLE AND BERRY CRUMB COBBLER

1 Fruit, 1 Starch
Ingredients
1 gala apple, wash, peel, core, and slice
6 small strawberries, rinse and sliced very thin
1/2 cup fresh raspberries, whole, rinse well
1/3 cup of reduced fat graham cracker crust, crumble well
2 packets of sugar substitute
1/2 teaspoon cinammon
1/8 teaspoon nutmeg
1 tablespoon of margarine, softened
Servings 2
Instructions
Preheat oven to 350 degrees. Spray 8 x 8 inch baking pan with cooking
spray. Mix all fruits together and toss with sugar substitute. Arrange
in baking pan. In bowl, combine graham cracker crumbs, cinnamon
and nutmeg. Gradually blend in softened margarine, use fork to combine.
Sprinkle this mixture over fruits in pan. Bake uncovered for 20-25
minutes, or until done. Remove from oven, let cool slightly before
serving.
